Double Gold (San Francisco World Spirits Competition 2023)
As we finished blending and marrying Batch 006, we had just emptied a 500 liter Pedro Ximénez sherry butt. Our instincts immediately told us we should take 500 liters of Batch 006 and put it into this Spanish oak sherry butt for the second fill. The second fill was perfect for Batch 006, as Batch 006 already had a “complete” wood profile.
We believed the spiciness from the rye, the residual fruit from the PX sherry and the gentle nuttiness from the Spanish Oak would transform Batch 006 in a pleasant way, giving us a second look at the original blend. With the additional 8 months in barrel, Batch 006 Second Summit earned an 18 year age statement. It is a blend of 18-26 year old whiskies. Just over 100 cases were produced.
Immediately, the nose hits with a barrage of apple butter, blackberry jam and childhood memories of Pepperidge Farm Chessmen cookies. The second pass reveals clementines and roses followed by fresh picked oregano and candied cashews atop a thick layer of toffee, maple syrup and fluffy pancakes. Underneath it all, there is a hint of burnt out campfire in the morning.
The landing is stunning and complex. The initial palate covers the full spectrum with sweet, citrus, savory and spicy notes all touching down harmoniously with one another. The viscous, tingling palate is perfectly integrated, presenting cedar wood, pine needles, demerara, tonka beans, black cherry and milk chocolate. The chocolate notes carry long into the nutty finish as a warming sweet, citrus and gently bitter blood orange note rises and falls, cresting as the whisky settles comfortably, never revealing its shocking 129.8 proof.
Instinct and curiosity. All of our previous cask finishes were well planned out. We created blends that needed more wood character. Batch 006 did not need wood, but we were fascinated by the prospect of taking a fully ripened wood profile and introducing it to a cask that would soften it and add complexity.
In mountaineering, there are the 7 highest summits on the 7 continents. The Second Summits are the 7 second highest. Often these peaks are more challenging to reach and equally impressive ascents. Batch 006 Second Summit is this whisky’s second peak and it is certainly just as delightful as the first.
